Vegan Spinach with Wild Rice Recipe

List of ingredients for spinach: Frozen spinach(5 bags), onion(1), fresh tomatoes(3), garlic(1 head), vegetable oil (2 tablespoon), 2 small cans of Red Kidney beans(drained and rinsed) and seasonings of your choice.

Wild Rice and water


Directions: Heat the oil on medium heat and add chopped onion and garlic, stir, after 2 minutes, add chop tomatoes and stir, after 2 minutes, add frozen spinach, stir occasionally. After 10 minutes, add beans and seasonings, continue to stir as needed. Let it cook for 10 more minutes.

Add rice to Rice Cooker and 4 cups of water per directions on package while the spinach is cooking.

This meal takes less than an hour to prepare for a finished meal that is healthy, delicious and budget friendly. You can store leftovers in refrigerator and reheat as needed.
