Portabella Mushroom Stir Fry with Boiled Plantain

This is a vegan recipe meaning no meat, chicken or fish. I occasionally eat fish but for the most part, this is how I eat. I find it filling and it works for me. Modify as you wish, substitute plantain with potatoes or rice and enjoy!

Ingredients:

You will need frozen mixed bell peppers and onion, fresh portabella mushroom, frozen asparagus, frozen kale and…


Plantain. Green or half-riped for sweetness. Peel, cut in halves.

Preparation:


Bring water to a boil.
Add plantain and cover.

Add 2 tablespoon of vegetable oil to a saucepan on medium to high heat.

Add frozen bell peppers and stir, season to taste.

It should look like this after 2-3minutes on high heat

Slice mushroom just like this or anyway you like

Add to pan and stir

After 3 minutes, add frozen kale and stir then

Add frozen asparagus, stir and cover

After 10 minutes, it is ready. Don’t overcook to retain nutrients.

At this point, about 20-25 minutes later, your plantain should be soft when tested with a fork. It is ready. Drain and serve.
