Here is another recipe to help you on your journey to lasting health and weight loss. You can substitute this with your usual meal twice a week.
You will need:
- 2 pounds Mayocoba or your beans of choice
- 1 onion
- 3 small tomatoes
- 6 Half ripe plantain
- 2 tablespoon vegetable oil
- seasonings of your choice
Add beans to slow cooker on high for 5 hours or until soft
While your beans is cooking, you can boil your plantain.
When you beans is soft, chop your onion and tomatoes.
Add oil in pot on medium heat and add onion.
After about 2 minutes, add tomatoes.
After 2 minutes, add the beans and let it cook for 10 minutes.
Once your plantain is cooked, drain water and serve. So, in less than 30 minutes, you are all done. Save time, money and feel good. Keep leftovers in refrigerator and reheat as needed.
Very satiating and filling with fiber and protein. I usually eat the beans by itself for breakfast and it keeps me going until lunchtime. Enjoy!
